Of course it makes sense that the best Key Lime Pie in Key West would be made from scratch at the best restaurant on the island. When I ate at the Red Shoe Island Bistro I ended the meal asking about their KLP. They told me it was made from scratch by them daily based on a recipe from the 1890’s. It was quite thin relative to the “production” pies in town, but it had an elegance and beauty about it that made it perfect. The crust was incredible, the filling just magic. I’d go back to the Red Shoe just for this, even though the rest of the meal was amazing.
